In this corner of the 7th arrondissement, bustling with businessmen, chef Bruno Aubin has created a healthy oasis under the glass roof of this discreet hotel restaurant. He passes between tables, greeting and chatting with his customers, curious and enthusiastic. His perfectly pearly turbot, flanked by roasted oyster mushrooms with nori seaweed and drizzled with dashi-infused beurre blanc, had the elegance of a three-piece suit that had relied on the measured extravagance of the motif. And yet, in this jovial and diligent cuisine, it was the desserts whose mouthfuls moved me the most. A rice pudding conceived as a dish, almost salty, with three distinct textures: a barely sweet citrus caramel at the bottom, a vanilla milk mousse and puffed rice grains offering all the comfort of cereal. The chef's chocolate soufflé is another masterpiece, an airy marvel that arrives puffed up in its copper circle and doesn't fall apart when a spoonful of banana ice cream and rum jelly is dipped into it. Another chef who admits he doesn't like sweet things, but whose desserts "à sa sauce" (to be ordered from the evening menu) are nonetheless disarming. Addictiveness score: 9/10.
